Fastest Jam Ever.  And the tastiest!


We found this easy and delicious recipe at Prevention.com.  We think it’s the perfect way to fastest_jamsavor the juicy goodness of Oregon berries all year long.  Just stir and freeze – so it retains all the flavor of the fresh berries.  Plus it has fewer calories, with one-quarter of the sugar used in regular jam.  Next time you’re at the Farmer’s Market, pick up a few extra berries and give it a try.  It’s summerlicious!
Very Berry Jam

Total Time: 20 Minutes + Standing
Yield: 4 Half-Pints

1. Whisk together 1 1/2 c sugar and 1 package (1.59 oz) “no-cook freezer jam fruit pectin” (like Ball) in a bowl. Be sure to buy the right type!
2. Mash 1 c raspberries, 1 c blackberries, and 2 c strawberries (hulled and quartered) in another bowl until fruit is a chunky puree.
3. Pour sugar and pectin into the bowl with the fruit and stir until very well combined. This will take 2 to 3 minutes.

4. Ladle jam into four 8 oz freezer jam jars (either glass or plastic), let stand until set, about 30 minutes, and freeze.

Voila!   Spread and Enjoy.

When you first meet Karen Kleinwort you’ll notice her friendliness, the warmth in her eyes, the gurgle of laughter that’s gngpic-1unexpected and her tendency to physically reach out and touch the person she’s talking to. Next you may become conscious of her eyes – what a beautiful hue of blue, their softness and how deep they seem to be, taking in the person in front of her, focused on you rather than her.

Lest you believe she’s Mother Teresa, let us assure you that she’s not. She’s a wife and mother of one child and two dogs, living and thriving in Wilsonville, OR. She also owns her own business called Therapy in Transition – a unique and exceptional coaching program.

Karen grew up in Ontario Canada where she started work at age four. Yes, you read it right – age four. Karen and her older sister were expected to help in the general store her parents owned in the small town where they lived.  “My parents understood customers always come first; that was our livelihood,” she says. “And what we did could affect that.” From a very young age the girls were raised with the values that good customer service, integrity and honesty won out over anything else when it came to business.  So there were rules.  One of them was they must be smiling upon entering the store and before helping themselves “we had to ask a customer if we could help them,” she says.

Her journey toward her current life’s work started on Feb.16, 1999 when she found Tito, her beloved lab, at a California animal shelter.  “For the next seven plus years Tito challenged me to rise above the norm and the expected regarding dog care and what people expect of human/animal relationships,” Kleinwort says now.

In 2006 Karen and her husband decided to move to Oregon and shortly thereafter discovered Tito had bone cancer. She still cries today when thinking of that time. “I had not lost anyone in my life,” she says. “I didn’t know what grieving was.”
While Karen was supporting Tito in the fight against the cancer, the idea of starting Therapy in Transition took root.

The original concept focused on the Interactive Pet Therapy Program but within a few short months after his passing Karen soon realized what the real purpose was and from there the organization expanded to include Life and Business Coaching for individuals and professionals as well as offering Reiki, CranioSacral, and many other supporting elements for clients to positively embrace changes and transitions they are experiencing.

Therapy in Transition essentially supports clients to continuously be “adjusting the focus on their perspective lenses” so they may see opportunities where they didn’t before.  The mission of Therapy in Transition says it all: Our mission is to coach individuals in rediscovering their inner wisdom by creating an open and safe communication environment. Through the use of multiple healing modalities our clients are able teach themselves how to accurately identify which role of their student-teacher selves is being invoked during each life experience. It is by meeting our clients where they are and by adjusting the coaching and healing approaches to each individual we further their transformation, growth and success.

Here’s what Karen had to say when we asked her our favorite Flourish questions:

1.  Who is your hero?
Simple, my sister Krista. There are no words to articulate or express why she is my hero; I just know she is one of the most amazing people I have come to know. As children we were like any other set of siblings but as adults we have come to know each other in a way that makes me want to be more like her every day as a mother, a woman, a wife and as an individual. She is inspirational and remarkable.

2.  What is your favorite quote and why?
There are so many quotes and not enough time in the day to reflect on them but I would have to say one of the top 10 would be “No problem can be solved from the same consciousness that created it.” by Albert Einstein. One of the keys to embracing change is willing to look at alternative perspectives of the situations we encounter. This quote reminds me any problem can be overcome by seeking the support of those around us and by being open to a perspective which is not our own.

3.  What keeps you flourishing?
My clients – their success reinforces my belief in what I do does make a difference one person at a time. Their improvements and forward growth makes a positive impact on so many others that the ripple effect of my work reaches thousands. My clients gratitude is the wind which keeps me airborne, courageous and in love with life.

4.  If you were a pair of shoes, what kind would you be and why?
I think this is the hardest question to answer for me since I love to be barefoot. I find shoes are too restrictive for my toes. There are no shoes which provide the grounding, nurturing or support like that of my skin touching and connecting with Mother Earth.

5. I can’t wait to…
Hug my son, kiss my husband, snuggle with my dogs, or embrace my family members. For everything else I have the patience to do and experience when the timing is right.

If you are anything like me, you probably always thought that only a few special people were artistic or creative and no matter how hard you tried, you weren’t ever going to be one of “them”.   Personally, I always thought creative and artistic were interchangeable.  I only thought of being creative in the artistic sense.    I have dabbled in all manner of artistic/creative pursuits (water color painting, photography, pottery to name a few).  I always started with high hopes that this time my hidden artist would emerge, but after a short time, I gave up in dismay convinced that there was no hope for me.  I just wasn’t a creative person.

Well, who knew then how wrong I was!  Creative thinking has little to do with your ability to paint a perfect still life.  In fact there has been a lot of research done on creativity lately and it appears that our capacity for creativity – our brainpower – is much greater than we could ever imagine.    Apparently we have ALL been gifted with a birthright of unlimited creative potential.   The key is to recognize our own potential and then figure out how to tap into the well.

Creativity comes from an open mind, an ability to look at things from a different perspective, and from a willingness to take risks and experience failure.  Creative thinking occurs when we challenge our long held assumptions and realize there is often more than one right answer.   Next time you are faced with a problem, consider asking yourself “How would I look at this situation if I was six years old?”  You’ll get the most amazing insight and sometimes…just the right answer.

Sarah Hahn is passionate about making a difference.   A little over a year ago, she joined a company, Humanity Unites Brilliance (HUB), who’s goal is to move the world from survival to self-empowerment to sustained abundance.  Through this new venture she is a partner in “creating a new paradigm connecting for-profit business and individuals with non-profit service”.  HUB has already supported non-profits with over one million dollars and each month through the HUB network Sarah’s individual contributions feed and educate 9 children, provide part of a well for a village and fund a portion of a micro-loan for women owned business.  And they’re just getting started!

In addition to a passion for helping people around the world, Sarah is passionate about horses.  She was riding horses before she could walk, in fact as a child she spent more time with her horses than her peers.   From the tender age of eight, Sarah was “hauled around” by her ever-supportive mom with horse trailer in tow going to all kinds of horse events and competitions.  Jumping was her favorite and she still holds the dream of competing in an Olympic equestrian event.

But wait, there’s more!  Sarah designs and sells fair trade jewelry with a friend through their business Alexandra Imports.  They work with women artisans in India and sell their beautiful jewelry at very reasonable prices with ten percent (10%) of their sales going to charities benefiting women and children in India.  Oh, and don’t forgt the cookbook!  Sarah is creating and writing  a “Gluten-Free & Good For You” baking book. “I love baking. Even more than baking, I love eating the baked goods” she says.   Her recipes are good for your body AND they taste like heaven!

We were curious just how one woman can juggle so many projects successfully?   “I am an idea person,  I have lists of hundreds of ideas from books to games to new school systems…I think one thing that life is about for me is freedom of expression- being able to step out and express my idea or desire or thought no matter how impossible or crazy it may seem. I am in gratitude for this.”

Here’s what we know for sure…this delightful young woman will be dreaming and making a difference and flourishing for many years to come!

Who is your hero? My horse Sister. I have been with her for 21 years and she has taught me incredible lessons about being authentic, trusting the bigger picture and especially about forgiveness.  She has refined my skills in working with energy & acting on intuition. More than once she has taught me the seemingly harsh lesson of humility- those were tough.  Mainly she is constantly reminding me to see with my heart and to enjoy the journey.

What is your favorite quote? “We are part of the whole which we call the universe, it is an optical delusion of our mind that we think we are separate. This separateness is like a prison for us. Our job is to widen the circle of our compassion so we feel connected with all people & situations” by Albert Einstein. This is life for me. The game of remembering we are all connected while juggling these forms of time, space & mass.

What keeps you flourishing? When I wake up each morning I figure there must be a reason I am alive today, so lets go find out what that reason is!! As an added bonus, I get to play this lifetime with an amazing, fun-loving man who supports me in my dreams- thanks Lester!

If you were a pair of shoes, what kind would you be and why? A pair of Italian, hand-made sandals with cork form-fitting soles & red bamboo fabric ribbon-wrap tops that tie just above the ankle.  A unique piece of hand-made art that is responsible with the use of sustainable materials, yet has enough flare and flexibility to celebrate life and dance the salsa as the sun goes down!  (She surprised us!  We were sure it would be a great pair of  pink cowboy boots.)

I can’t wait to… own our first farm of 80 acres where we will build our first yurt – off the grid of course!

The Pink Phoenix Story …

You may have seen the Pink Phoenix Dragon Boat Team during the Portland Rose Festival Dragon Boat Races.  In fact, you probably couldn’t help but notice them – they’re the team wearing pink life jackets.  You see, this team is made up entirely of breast cancer survivors.

Their name, Pink Phoenix, is taken from the pink ribbons worn by breast cancer survivors and from the mythical bird that consumes itself in fire and rises from its own ashes-a triumphant symbol of rebirth and renewal of human spirit, not unlike the renewed commitment to life after surviving cancer or any life threatening disease.

Interestingly, the team was not founded by a breast cancer survivor, but by an avid dragon boat paddler, Dorothy Atwood, who was inspired by a team of blind paddlers.  Founded in November 1996, with help from the Susan G. Komen Breast Cancer Foundation, the first team had 25 members.

None of the women had ever paddled before. They ranged in age from 29 to mid 60s and they were in different stages of physical fitness.  This didn’t stop Dorothy. Her desire to share the sport she loved so much had her out several times a week from February through the end of summer teaching and training this new team.

The team has grown from those first 25 members to more than 80! Pink Phoenix has raced in Rose Festival every year since. In fact, the team has raced in venues around the world.

Word Play!

We’re having so much fun with Wordle.   It’s a fun online site where you can create “word clouds” from text that you provide. The clouds give greater prominence to words that appear more frequently in the source text. You can tweak your clouds with different fonts, layouts, and color schemes.  It’s word play for adults and frankly, we might be spending just a little  too much time there.  There’s something magical about seeing how the words come together.    Make them for inspiration, for gifts, and for fun.

“But, I just don’t find myself that interesting!” That’s what we heard when we asked Gabby to be our Flourishing Friend for May.   Excuse us, but we beg to differ and you will too, when you learn how this amazing woman turned one of her life’s gabbyandnatashacraterlakesaddest moments into a vision that is truly making a difference for women everywhere.  Her business is booming these days – Go girl! – but she took a few minutes to chat with us about what makes her a flourishing woman.

Growing up a Military Brat really helped Gabby understand “we are all in this together!”  It takes all kinds to make up this world and that, for Gabby, is what make’s the world a more interesting place.

Born in Germany, she lived most of her life in Georgia until making the move to Oregon several years ago. And, by the way, she thinks Crater Lake is the most beautiful place on earth.   Gabby worked many less than inspiring jobs, but when she took a real estate course as a college elective, she was immediately hooked.   “I could not believe you could buy a home, live there and enjoy it, write off the interest on your taxes and then sell it and keep the profit (most of the time).   I thought why isn’t everyone doing that?  I need to help people do this!”  That was the beginning of her real estate career and Gabby has never looked back!  Sixteen years later she owns her own successful company, Realty Solutions and the profits helped fund her true life passion, the non-profit she started, Jessica’s Hope.

Jessica’s Hope was founded in honor of her mother who lost her life after a 5 year battle with Ovarian Cancer .   Her focus is on raising awareness and money in the search for a test for ovarian cancer.  Gabby wants everyone to know that there is currently no definitive test for ovarian cancer.  Therefore most women get diagnosed in the late stages of the disease.  There is a 90% survival rate with early detection.  Her passion shines through when you talk with her – she’s a woman on a mission!  Gabby funds all administrative costs for Jessica’s Hope through her real estate company so that 100% of donations go to The Ovarian Cancer Institute at Georgia Tech where they are looking for a test.

The Jessica’s Hope website is a great resource for information, inspiration and support.   They also have a very creative on-going fundraising program.  Make a purchase through the online store from one of their great partners and a percentage every purchase goes directly to support the organization.   You can also use the portal to shop at places like Amazon.com and they will give a portion of your purchase price back to Jessica’s Hope.  We all love to shop and this is an easy way to do something good at the same time!

Who is your hero? Cliché but true – My mother is my hero.  Although she is not around physically, her spirit is with me every day.  She had a great work ethic and was very independent. What makes her my hero though, is her kind soul.  She always found the good in someone.  I don’t remember a time when she said cruel or mean things about anyone.   Her favorite saying was “you make your bed, you lie in it”, but I always knew that she would always be there to help get me up again.  In her mind it was the right thing to help other people when you could.

What is your favorite quote and why? My favorite quote is “if you continue to do the exact same thing, you will continue to get the exact same results”.  I am not sure who came up with this quote, but it can apply to your personal life as well as your business life and if something is not working in either, I look for something I can do differently.

What keeps you flourishing? I enjoy life.  I work hard, but I play hard also.  As I have gotten older I’ve learned to take time for me.  It truly is the secret to keeping your sanity.

If you were a pair of shoes, what kind would you be and why? I would be a pair of Michelle K.’s  They are comfortable with a subtle style.  This describes my personality.  I am often told that I have a unique style.  I like to call it comfortable and honest. Michelle K’s are comfortable with a simple, honest style.

I can’t wait to… Wake up tomorrow and see what adventures the day brings.  “The only day you have is the one in front of you, so choose wisely what you do with it!”

National Women’s Health Week is celebrating it’s 10th year and we want everyone to join the party!

This week is a time to remind all the women you love that taking care of themselves is essential to living longer, healthier, and happier lives. Adult females in yoga class.Women are often the caregivers for their spouses, children, and parents and forget to focus on their own health. Research shows that when women take care of themselves, the health of their family improves. During National Women’s Health Week events are planned all across the country that will help educate our wives, mothers, grandmothers, daughters, sisters, aunts, and girlfriends about the steps they can take to improve their health and prevent disease. After all, when women take even the simplest steps to improve their health, the results can be significant and everyone can benefit.

OHSU Center for Women’s Health is celebrating National Women’s Health Week by offering fun events to help jump start the physical activity in your life.  Get motivated and get moving with a kick-off event and FREE fitness classes all week.

Kickoff event May 11, 2009 – Free Fitness Classes All Week with a motivational presentation from Britta Torgrimson, Ph.D., about the many health benefits of exercise (hint – there are probably more than you know about!).

Throughout the week, complimentary fitness classes will be held at different locations throughout the Portland metro area. Classes include: Chi Qigong, Yoga, Aqua Aerobics and more! Many classes will be accessible to people with disabilities.

Space is limited so online registration is strongly suggested.  If you live in Portland, we’ll see you there!

We’re borrowing a line from a great Monty Python song here because we wanted to share a fun idea.  This month’s Flourish salon topic is the Science of Happiness with our local happiness guru, Ellen Raim, and judging from the large sign up, it seems like a very timely topic.  Seems like we’re all getting just a little bit tired of the barrage of downer news and media hype and most of us are ready to once again “look on the bright side of life”.  Ellen was telling me about  the playlist of happy music she put together for the beginning of the event.  She’s going to set the mood from the minute women walk in the door.  The music is fun, upbeat and all containing the word “happy“.

That got me to thinking!  How could I use this music and keep the happy going long after the event is over?   Wouldn’t it be fun to have my own, on-demand playlist of happy songs on my iPod!  Who wouldn’t feel better after a 30 minute walk listening to nothing but happy songs?  Maybe you want to give it a try too.   You’ll burn off a few calories and probably add a spring to your step and a smile to your face.  Add a little sunshine and you’ll be singing What a Wonderful World!
